Hey, Nina! I have no idea if you could substitute spelt or all-purpose for the flour unfortunately. My best guess would be that you’d have to experiment with the amounts – it wouldn’t be a 1:1 substitution. As for pumpkin pie spice, it’s a mixture of cinnamon, nutmeg, cloves, ginger, and allspice – here’s a recipe for the mix! http://ohsheglows.com/2015/10/25/homemade-pumpkin-pie-spice-mix/
